Mmmmmm...Florentine Stuffed Chicken

I threw together a few random ingredients that needed to make their way out of my fridge...and abracadabra out popped a marvelous dinner with lunch for four additional days! It took less than 10 minutes prep, 35 minutes to bake.

I added minced garlic, chopped spinach and purple onion to a small carton of plain, Greek yogurt (it's really thick), stirred in some feta and parmesan. I stuffed all of this inside the cavity of each chicken breast, poured some tomato sauce on top, sprinkled with additional cheese and fresh basil, and threw it in the oven.

In other news, last night I ran the fastest time for 3 miles I've run in awhile...29 minutes. That may not sound like much, but I was pleased. I'm carrying around 5-8 extra pounds which makes me slow as Christmas. I am working on it. Am running in a half-marathon in 3 weeks in preparation for the real thing in January.
