Baking makes me happy. Very happy. More specifically, baking a gluten-free quick bread that neither sucks all moisture from my mouth nor leaves me with a mouthful of grit leads to my supreme happiness (at least in culinary matters). I am quickly learning that one is not a true baker until he masters the gluten-free world. It is quite an endeavor!
This, here, is my latest GF conquest: gluten-free (and nearly dairy free) zucchini muffins. They are moist and delicious and just crumbly enough. One would never know they were gluten-free. With that being said, the form does need some work. The edges and centers fell so I would not exactly sell these babies at a bakery yet.
